Question

I read your article on antioxidants and ORAC scoring and I'm confused. Does an ORAC score measure one antioxidant or is it an accumulated combination of antioxidants in a particular fruit? If it's accumulated, how do you know how much of each antioxidant contributes toward your final score?

Answer

ORAC refers to the Oxygen Radical Absorbance Capacity of whatever you're testing -- whether it is a single fruit juice, for example, or a combination of five juices. It's a measurement of whatever you're testing. In combination, you have no way of knowing how much each component is contributing -- unless you know exactly how much of each component is included.
